What it is
Clicking is cutting with a shaped blade rather than a knife or a pattern. The blade — the die — is made to the outline of your component, and a press drives it through the material.
The advantage over cutting by hand or by pattern is consistency. Every part comes out identical, which matters when the component has to fit into an assembly the same way ten thousand times. It's also considerably faster once the blade exists.
The blade is the investment. Once you have it, the parts are cheap.
